Celebrate the veggie way

We are celebrating national vegetarian week in May 2018!

Here’s another healthy vegetarian recipe which we love:

Apple and Raspberry Loaf (Serves 8)

Ingredients: 120ml YORS rapeseed oil, 170g golden caster sugar, 50ml milk, 3 eggs, 170g self raising flour, 1 tsp baking powder, 1 large peeled and sliced cooking apple, 1 small handful of fresh or frozen rasp

Method: Put sugar, flour, YORS rapeseed oil, milk, baking powder and eggs into a bowl and beat well in  a golden batter. Peel and slice the apple. Put about a quarter of the mixture into a loaf tin  and then place half of the apple in. Put a further quarter of the mixture in the tin and add sliced apple. Top with remaining mixture and sprinkle with a tablespoon of  caster sugar. Place in oven at 160c/gas3 and bake for one hour.
