Yorkshire’s Original Cold Pressed Rapeseed Oil – known as ‘YORS’ – has been grown, pressed and bottled on Lilac farm in North Yorkshire since 2006, has half the saturated fat of any other culinary oil as well as a multitude of nutrients including essential Omega 3.

It can be heated to 220oC, the highest smoke point of any cooking oil, and so does not burn or release cancer causing carcinogens ensuring perfect crispy roast potatoes.

You can roast, but bake, grill, BBQ, dip or drizzle making it a truly versatile oil for use with any meal, especially for those slimming salads and low fat recipes after Christmas when we’re trying to keep those New Years’ resolutions to be healthier, following the festive period.

This month’s Yorkshire recipe:

Wharfe Valley Wilfra cakes – a twist on a Yorkshire classic!

We have a delicious Yorkshire recipe to share given to us by Steph Moon,  a well known Yorkshire chef. Steph represented the North East on BBC2’s Great British Menu in 2011 and is a consultant chef in her own business ‘All things food’. She recently prepared this treat for us whilst recording an episode of Made in Leeds at our rapeseed farm in Collingham, Yorkshire.

This is a traditional Yorkshire recipe for a cake which was historically baked and given out to the people  of Ripon to celebrate the return of St Wilfred from exile in the 7th Century.

Shortcrust pastry: 8 oz plain flour, 1 oz Wharfe Valley rapeseed oil, 2 oz butter or margarine, 1 tablespoon caster sugar, 1 pinch of salt, 1 egg yolk, 1-2 teaspoons water

Filling: 1.5 lb peeled and thinly sliced cooking apples, 3 oz demerara sugar, 3 oz grated Wensleydale cheese, lemon rapeseed oil to drizzle.

 

Method:

Rub the Wharfe Valley rapeseed oil and butter into the flour, sugar and salt. Mix to a stiff paste with the egg yolk and a little water. Leave to rest in a cool place until required.

Line a swiss roll tin with half the pastry and lightly prick the bottom. Lay on the finely sliced apples and add the sugar. Grate the cheese onto the top. Put on a pastry lid and brush with milk and sugar. Make a few slits along the top and bake for 10 minutes at 425oF, 220o, Gas Mark 7; for 10 minutes and then lower to 350oF, 180oc, Gas Mark 4; for a further 30 minutes. Serve with custard or cream.

The combination of apple and cheese is one much loved by Yorkshire men and women, “An apple pie without the cheese is like a kiss without the squeeze,” or so the little jingle would have it!

Results are announced at an Awards Ceremony on Thursday, 11th October, 2018 at the Pavilions of Harrogate, The Great Yorkshire Showground, where we will find out if we’ve been successful.

Celebrate the veggie way

We are celebrating national vegetarian week in May 2018!

Here’s another healthy vegetarian recipe which we love:

Apple and Raspberry Loaf (Serves 8)

Ingredients: 120ml YORS rapeseed oil, 170g golden caster sugar, 50ml milk, 3 eggs, 170g self raising flour, 1 tsp baking powder, 1 large peeled and sliced cooking apple, 1 small handful of fresh or frozen rasp

Method: Put sugar, flour, YORS rapeseed oil, milk, baking powder and eggs into a bowl and beat well in  a golden batter. Peel and slice the apple. Put about a quarter of the mixture into a loaf tin  and then place half of the apple in. Put a further quarter of the mixture in the tin and add sliced apple. Top with remaining mixture and sprinkle with a tablespoon of  caster sugar. Place in oven at 160c/gas3 and bake for one hour.

We’ve included a carrot and ginger soup recipe to give you some inspiration and can’t wait to hear from you and read YOR surprising ideas.

CARROT AND GINGER SOUP:

Quick, easy and mouth wateringly good. This soup is perfect for a lighter lunch, so why not make a few more portions and keep it in the freezer for emergencies.

Each serving provides 160 kcal, 2g protein, 23g carbohydrate (of which 19g sugars), 4.5g fat (of which 1g saturates), 10g fibre and 0.9g salt.

Ingredients

  • 1 tsp rapeseed oil
  • 1 small onion (75g/2½oz peeled weight), finely chopped
  • 1 garlic clove, finely chopped
  • 20g/¾oz fresh root ginger, peeled and finely chopped
  • 200g/7oz carrots, roughly chopped
  • 300ml/10fl oz vegetable stock
  • freshly ground black pepper
  • 1 spring onion, finely chopped, to serve1.Heat the oil in small saucepan over a medium heat. Add the onion and cook for 2–3 minutes. Add the garlic, ginger and carrots and cook for 5 minutes, stirring occasionally. 3.Pour the soup into a food processor and blend until smooth. Return to the pan and reheat gently.
  • 4.To serve, pour the soup into a warm serving bowl and garnish with the spring onions.
  • 2.Add the stock and season with pepper to taste. Bring to the boil, then reduce the heat, cover and simmer for 20 minutes, or until the carrots are soft.
  • Method

We are very proud that WM Morrisons Supermarket, Skipton has added our whole range of YORS branded products, Yorkshire Original Rapeseed oils, mayonnaise and salad dressings.

In the first week customers have responded well to the YORS products and YORS Chilli Infused Cold Pressed Rapeseed Oil was one of the top selling lines.
